Recipe Box: 3-Ingredient Paleo Protein Pancakes (Gluten & Sugar Free)

A few years ago, before my sophomore year of college, I fell into something of a fitness kick. In addition to, for the first time in my life, committing to fitness and health, I began paying attention to the food I was putting in my body. In that time, I discovered a great recipe for two-ingredient pancakes and put my own twist on it.

Below, learn how to make 3-ingredient paleo protein pancakes that are gluten-free with no added sugar.

Ingredients (to serve 2):

  • 4 eggs
  • 2 large bananas
  • 1 scoop vanilla protein powder
  • 1 tbsp coconut oil


Start by cutting the bananas into smaller pieces, in order to make it easier to blend them. Add bananas, eggs, and protein powder into a blender or food processor and puree until well mixed.

If you don't have a blender, you can whisk the ingredients together in a medium-sized mixing bowl. 

Heat a medium-sized non-stick pan and add 1 tbsp coconut oil to fry the pancakes. Add about a ladle-full of batter for each pancake, fry for about 2 minutes on side slip, flip and fry on opposite side for 30 - 60 seconds. Repeat until you've used up all the batter for about 20 small pancakes.
